A delicious yet mild flavor makes this the most highly sought-after shallot in the world by gourmet chefs. They are considered the only true shallots, as they can only be propagated from bulbs. We love them because they are easy to grow from sets—planted in the fall and harvested in the spring—they can withstand cold winters and freezing temperatures, just like garlic. These shallots can be used for both culinary purposes and seed stock. You can recognize the true French Grey Shallot by the purple streaks on a white background. Though they have a rough exterior, underneath the wrapping lies a little jewel.
In my first experience with these, I cooked them in butter and mixed them with some of my garlic scapes. Absolutely delicious!
